If you have extra potatoes from your garden or purchase bags of organic potatoes like I do a great way to use them is by making your own organic hash browns and french fries. They really are easy to make and much cheaper than buying ready made.
I wash the potatoes and then parboil by placing the potatoes in enough water to cover them, turn the heat on high, and as soon as they begin to boil turn off the burner. I then let them sit for 10 minutes (for smaller potatoes you can allow them to sit for 5 minutes). I then drain the water, put them in a bowl and place them in the refrigerator to cool. When they are cool I peel them and process. They do not have to be peeled but my husband does not like the peels.
For french fries I just slice into strips, place on a cookie sheet with a Silpat or waxed paper and then freeze. After they are frozen I placed mine in a freezer bag, label and then cook when I am ready. You can toss them in coconut or olive oil, sprinkle with any seasoning you like and bake for approx. 45 minutes at 450 degrees.
When making hash browns I use my food processor (see video below) a mandolin or a grater. I also freeze them on a cookie sheet, place them in serving size freezer bags and cook them in my cast iron skillet when I am ready.
