Healthy Banana Muffins

I had lots of bananas from my first stalk that were all going ripe and I wanted a healthy recipe for banana muffins.  I decided to go to a GREAT food website “foodlets.com“.  Charity has so many great recipes and this one is no exception.  These muffins have no sugar and use coconut oil.

Ingredients

  • 4 ripe bananas (my bananas were small so I used 2 for every one)
  • 1 egg, beaten
  • ¼ cup melted coconut oil
  • ½ cup to ¾ cup honey (depending on ripeness of bananas, I used 1/2 cup)
  • 1 1/2 cups whole wheat flour (I used my own ground wheat, 1 cup hard white and 1/2 cup hard red, from Breakbeckers)
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
