I received my delivery from Space Girl Organics yesterday and there were 2 wonderful purple sweet potatoes so I decided it was time to try some baked sweet potato chips.
This has to be one of the easiest recipes know to mankind. I got my first recipe from the Martha Stewart website. Unfortunately most of my chips burned even when I didn’t cook them as long as the recipe said. So try this lower temperature recipe.
Sweet Potato Chips:
- Sweet Potatoes (2 medium)
- Olive or Coconut Oil
- Sea Salt
- Parchment Paper (optional)
- 2 cookie sheets
Preheat oven to 200 degrees. Slice the sweet potatoes 1/8 thick. I used a mandolin, it makes this step SO easy. Put slices into a bowl and pour in a bit of oil to coat lightly. Spread chips onto parchment lined cookie sheets and sprinkle lightly with sea salt. Place the 2 cookie sheets onto 2 center racks. Bake for 50 minutes turn and bake another 30 minutes. Chips should be soft in the center and crisp on the edges.
These are so yummy and will keep for approximately 3 days but they last that long.
