Gluten Free Waffle Recipe

While I was trying to get to sleep last night I decided I wanted to try some homemade waffles in the morning so I grabbed my Kindle and looked up a recipe.  Here is the website.

These really are good!  Yep that’s right “good” gluten free waffles.  Here are the ingredients:

  • 1 c of brown rice or rice flour
  • 1/4 c of tapioca flour
  • 1/2 c of potato starch (not potato flour)
  • 1 tsp of sugar
  • 1 1/2 c of buttermilk or regular milk (I used homemade Kefir)
  • 1/4 c of oil (I used olive oil)
  • 2 tsp of baking powder
  • 1 tsp of salt
  • 2 eggs

Whisk everything together and pour into a waffle maker.  I cooked mine on medium high for 6 minutes.

I was able to get 5 waffles out of this recipe.  I froze the other 4 and will pop them into my toaster when  I want one.

I am going to mix up some of the dry ingredients, put them in a canning jar, and attach a recipe card to give as gifts for my gluten free friends!

    Coolio… I too, have been wanting a good waffle. Do they crisp up? Thinking the Potato starch would help getting them crunchy good.
