The original recipe for this is called “Garlic Pesto Chicken with Tomato Cream Penne” and is from Southern Girl Cooking. It looked so good I had to try it.
It seems my attempts always have changes.
- I could not find the Lawry’s Marinade so I used Newman’s Herb and Roasted Garlic.
- I used Tinkyada’s Gluten Free Spirals to make this dish gluten-free.
- I used my homemade pressure canned chicken broth.
- I cut my chicken in to smaller pieces.
I marinated the chicken in a plastic bag over night and it was yummy even without the sauce. I love the Tinkyada brand of gluten-free pasta and use it for all my dishes.
I never know if my husband is going to like something new but, I knew it was a hit when he went back for seconds.
