Baked Veggies

I knew I wanted to try this when I saw it on Pinterest.  I made a meal for a family yesterday that likes lots of veggies so it was a great time to try it.  I even made a little for myself and it was YUMMY.

This dish is a bit similar to my baked Ratatouille but with a twist.  I am sure you could use just about any veggie you want.  If you use eggplant I think I would cook it with the onion and garlic first.

My next gadet will be a mandoline slicer to get all the veggies the same size.
