Canning Peaches with Honey

Peach prices have been coming down and I decided to try and save some of that beautiful flavor.  I prefer not to use sugar if possible so when I found the recipe for a light syrup using honey I was all in.

The light syrup consists of 4 cups of water and 1 1/2 cups of honey.  I used right around 5 1/2 lbs of medium sized peaches.  If you use large peaches you will probably use a bit less and smaller peaches you would use a bit more.

I was able to can 12, 8 oz jars and I cut my pieces small.  My husband can take these smaller jars to work for lunch.

The price for the peaches was $.68 per jar at $1.49 per pound.  I have seen peaches for $.99 and hope I can again soon.  I purchase my honey by the gallon so I am not sure what my honey cost was.

I tried canning one jar with a teaspoon of Moringa powder and can’t wait to see what it does to the taste.
