Homemade Coffee Creamer – Vegan

Recently I have been craving iced coffee so  yesterday I  purchased some at McDonald’s, yes I know, please don’t scold me…..

Anywho….Because I know that those wonderful flavored coffee creamers are full of stuff I can’t pronounce and probably don’t want to know what it is (This is from one of their websites)

INGREDIENTS: WATER, SUGAR, PARTIALLY HYDROGENATED SOYBEAN AND/OR COTTONSEED OIL, AND LESS THAN 2% OF SODIUM CASEINATE (A MILK DERIVATIVE)**, DIPOTASSIUM PHOSPHATE, DISODIUM PHOSPHATE, MONO- AND DIGLYCERIDES, NATURAL AND ARTIFICIAL FLAVORS, CELLULOSE GEL, CELLULOSE GUM, COLOR ADDED, CARRAGEENAN.

I decided to go on a quest to make my own.  The first one I found and tried uses sweetened  condensed milk.  Since I didn’t have any, and don’t like to use milk products if I don’t have to,  I found a recipe for making it with coconut milk (you can use canned condensed milk or make some from regular full fat milk).  After making my condensed milk I added the same amount of coconut milk and 1 tsp. of vanilla. 

Wow, why didn’t I think of this sooner!!!  You can use the base and add any flavors you want and of course you can drink this in hot coffee too.
