Really?! Coconut butter is just ground coconut? I watched several videos and read several websites before I decided to try this. Why try it? Because coconut butter is great for our health. While coconut oil is the oil pressed out of the coconut, coconut butter is ground up coconut so it still contains the oil and can be used in a variety of ways.
I don’t have a regular blender right now so I decided to use my food processor. You just pour in your dried, shredded, unsweetened coconut (at least 2 cups) and blend until it becomes butter. That’s it! I blended mine for around 7 minutes and it became a warm creamy butter.
The cost of my pint was less than $4.00. I have seen 8 oz. of organic coconut butter for almost $20.
OK, what now? The search was on for how to use this creamy creation.
I warmed up some of my coconut butter and then coated banana slices and strawberries, then dipped them in dark chocolate. How yummy is that! I suggest making sure the strawberries are at room temperature before dipping in the coconut butter as the butter becomes hard. I placed them on parchment paper and set them in the refrigerator for a few minutes. What a great healthy snack.
