A friend posted a recipe for this on Pinterest and it sounded so good. I went to the link and it was some software you had to download with tons of recipes on it. No thank you. So I searched and came up with several websites that had similar recipes. Here is how I made mine:
- 2 chicken breasts (my chicken pieces were quite large) – pound until thin
- 1/2 cup sour cream
- 1/2 cup shredded pepper jack cheese
- 10 oz of frozen spinach – you can use fresh spinach
I defrosted the spinach and then added the sour cream and pepper jack cheese. Spread the chicken with this mixture and then roll it up. You can use tooth picks if the chicken does not stay rolled. Cook at 375 degrees F for 50 minutes.
The original recipe added 4 cloves of garlic but my husband doesn’t like garlic, bummer. And the chicken is wrapped with strips of bacon, I don’t do pork. If you use the bacon the cooking time is 35 minutes and then broil for 5-10 minutes.
This is soooo good and moist. I hope you enjoy it like I have.
