I don’t know about anyone else but I LOVE the sound of a popping lid after canning. Of course that means that whatever yummy goodness I made is safely locked away in my ball jars. Tonight it was my blueberry jam.
I purchased 6 lbs of blueberries from my friends who own “Heart of Christmas Farms” which is located in Christmas Florida. They are a hydroponic farm.
I used the Sure Jell low sugar fruit pectin and the recipe that comes enclosed. The regular Sure Jell calls for 4 cups of blueberries and 4 cups of sugar. The low sugar recipe is 6 1/2 cups of blueberries and 4 1/2 cups of sugar. I ended up with almost 7, 8oz jars filled to the brim with blueberry yumminess. I processed the jars for 10 minutes in a water bath canner.
Hopefully this evening I be able to try the gluten free graham cracker recipe I found and then on Friday I can make blueberry cheese cake! Yeah!!!
