This recipe is the best gluten-free cookie I have ever tasted. Believe me I have tried some that are pretty bad. My husband liked them much better than the almond flour ones I have made. I took them to bible study today and everyone there could not believe they were gluten-free.
This recipe is from the recipes at Tropical Traditions which is where I purchase my coconut flour.
In some of the comments people said they were a little grainy but I did not find that to be so. It might be because I didn’t use tapioca flour. I looked on the internet for a substitute and came up with potato starch which was something I did have. Some of the comments about tapioca flour was that it was grainy.
Here is the website for the recipe “Chewy Gluten Free Chocolate Chip Cookies“. The ingredients are listed by weight which was a little different. Glad I have a scale. If you scroll down they do have the ingredients by measurement but they don’t guarantee the results. Guess I will try it in the future to see if they turn out the same.
Note: These cookies did not spread out like a typical cookie so I pressed them a bit before baking.
