Every year it seems I am able to acquire some of the halibut my dad catches in Alaska. This is no easy task. If he shipped it to Florida it would cost a fortune. A few years ago my brother was visiting and showed us a great recipe for fixing this wonderful fish.
This is an easy recipe and only takes 5 ingredients coconut, egg, Panko bread crumbs, wasabi and coconut oil (or some type of oil) for frying. I DO NOT like spicy foods but with frying the wasabi it does not seem to not end up spicy. I have fixed this recipe before and baked instead of fried and it ends up being somewhat spicy.
For 2 halibut filets used:
- 1 egg
- 1/4 cup wasabi
- 1/2 cup coconut
- 1/2 cup Panko bread crumbs
Mix the egg and wasabi together and coat the filets. Mix the bread crumbs and coconut together and then coat the filets in this mixture. Heat the oil in the pan and fry on medium until fish is just done. This will depend on how thick the filets are but approx 10-15 minutes. You do not want to over cook. Then enjoy!
